
Gluten-Free Fruit Cake
Mantler Gluten-Free Sponge & Cake Mix or Mantler Gluten-Free Flour
Ingredients:
- 250g Mantler Gluten-Free Sponge & Cake Mix
- 4 eggs
- 50g butter (melted)
to cover:
- 375g fruit of choice e.g. apricots
Preparation
Beat the flour and eggs in a mixer for 3 minutes, then fold in the melted butter.
Spread the mixture evenly over a lined baking tray, then sprinkle with fruit and bake.
Ingredients:
- 400g Mantler Gluten-Free Flour
- 300g cooking oil
- 350g powdered sugar
- 6 eggs
- ½ packet gluten-free baking powder
- grated lemon zest
to cover:
- app. 375g fruit of choice e.g. apricots
Preparation
Mix all the ingredients with a mixer for 3 minutes.
Spread the mixture evenly over a lined baking tray, then sprinkle with fruit and bake.
Baking time: app. 40 minutes in a preheated oven
Baking temperature: 190°C
